Thai Coconut Dressing

Serves: 
6-8
Ingredients: 

3” piece ginger root

4 garlic cloves

½ tsp. crushed red pepper

½ cup Braggs Liquid Aminos

4T. sesame oil

2 T. lemongrass infused coconut water **see below**

½-1 cup coconut water plus coconut meat I use 1 or 2 coconuts (water plus meat)

1 tsp. fresh basil (optional)

1 large handful cilantro or more if you like cilantro

1 lime (juice + zest)

 

Lemongrass Infused Coconut Water

 

1 stalk lemongrass chopped

1 cup coconut water

1” piece of ginger

 

Blend and strain, use reserved liquid

 

 

Instructions: 

Place all ingredients in Vitamix and blend until thick and creamy.

Use water or coconut water or almond milk to thin the dressing if it is too thick.
